Mango-Jalapeno Shrimp Wontons

Ingredients:

  • 1 cup of shrimp, diced and gently cooked; do not overcook!
  • 1/4c mango well drained and diced (I recommend letting them sit in a paper towel to absorb moisture)
  • 1/8c jalapeno, small diced
  • 1/8c of red onion small diced
  • cilantro, preferred amount chopped
  • large dollop of Boursin chive to gel the mixture
  • Season with S&P to taste
  • Wonton squares
  • 1 beat egg for pinching wontons together

Directions:

  1. In a mixing bowl, combine ingredients except wontons and egg, saving cilantro for the last.
  2. Place 1 tsp mixture in the center of wonton square. Must be a small enough amount to completely wrap in the wonton
  3. Pinch opposite corners of wontons using a finger drop of egg to glue the dough, then do the same with other corners to create a pouch.
  4. These can be baked, air fried or fried.  They’re delicious either way.
  5. Baked- 10 minutes at 400 degrees
  6. Air fry- great, healthy alternative to frying
  7. Fried- Immerse in oil.  Can be vegetable oil, peanut oil or corn oil or something with a high smoke point that will not create an adverse flavor to the dish.
